Perfect for slow cooking and very very tasty.

Belly of Pork or Pork Belly

Belly of pork is ideal for slow cooking.  Score the skin,  put loads of salt on the skin. We cook it in the oven for 20 minutes at the hottest the oven will go, and then we turn it down to 150 and cook it then for about three hours. It’ll end up being crispy and soft on the bottom. Beautiful.
