This Italian style free range spatchcock chicken has been marinated for 48 hours in fabulous ingredients such as garlic, balsamic vinegar, dried herbs, olive oil, and fresh tomato. Remove cling film and roast in a preheated oven for 70 minutes or pop on the bbq for 25 minutes.
After work, you can throw this in the oven for 70 minutes. And it’s done.
The Italian one is a more of a traditional Italian with garlic, tomatoes, thyme, herbes de provence, balsamic vinegar, olive oil, just beautiful.
Spatchcock is the whole chicken with the backbone taken out. Once you take that out, you press it down, until it’s flat like a butterfly. Taking that bone out reduces the cooking time and also allows you to marinate the chicken. Because if you were to marinate the chicken whole, marinade falls off, but once the chicken is flat it sits better in the marinade.
