This deliciously plump free range chicken which we have taken the backbone out and generously stuffed on the bottom of the tray to enhance better flavour to both chicken and stuffing. FEEDS 4 ADULTS
We do suggest just when the chicken is done, take the chicken out, put the stuffing back in for 10 minutes just to get the top of it crispy. Love that crispy stuffing!
It’s our own stuffing, we don’t mess around with stuffing. Simple & traditional, old school; herbs, breadcrumbs, butter, salt, pepper, done.
What we do with that is, we don’t stuff it the old fashioned way, we stuff it on the base. We spatchcock the chicken. And then we put the stuffing on the bottom, so all the juices from the chicken go into the stuffing, you get that lovely flavour from the stuffing.
