Or moon river as we call them in shop. The liver comes into us fresh every Thursday with the lambs. It’s coming back into fashion big time. It was a very old dish in Ireland years ago. But now people are finding out about all the health benefits they have. They’re full of iron and taste great. One of those blasts from the past really. 

The way to cook it would be, bit of flour, onto a pan for literally like a minute each side, you don’t want to over cook it because it goes dry. In Ireland we like to serve it with mash, onions and fried tomatoes.
