Sirloin Roast
The Sirloin Roast is the leaner part of the roast, so you have a rib that has that fat in the middle, but sirloin has the fat on the top. So if you have people who don’t like fat through the middle of the beef, the sirloin is the one to get.
It has the fat on top for flavour, but lean in the middle. And the same again for this, 25 mins per kilo, and allow to rest, please don’t forget to allow to rest.
Half an hour at least to rest.
