Centre Loin Chops
They’re the most popular lamb chop in Ireland. They are a T-bone of lamb so you get the layer of fillet on the bottom, and then the loin on the top.
You can cook them by grilling, oven or pan fried, they’re very versatile.
We like to marinade them in garlic, rosemary and olive oil four hours before cooking. Delicious!
