These are back in fashion. Long slow cook, three hours minimum is great for them. Add salt, pepper, rosemary, garlic into a ceramic dish, bit of stock, bit of red wine, cook them for three hours, take them out, and you have a beautiful lamb dish that’s with meat that is soft and tender and will fall off the bone.
