Minted Spring Lamb Shanks

Tender spring lamb shanks that will fall off the bone when cooked long and slow. We have marinated these in mint, paprika, olive oil, parsley with a hint of chilli. Remove all packaging and place inside a roasting pan with a bit of oil. Cook in a preheated oven at 150c for 3 hours.

We found that the lamb burger with fresh mint was very popular so we’ve now gone and put it on to the lamb shank, and they’re going really well. Again it’s for that kind of casual lamb Sunday dinner, you don’t want to be standing over a roast but you want that deep flavour.  

This go with anything. I love these with the pasta rice, riso. Gorgeous.

INGREDIENTS: Wicklow lamb shank, chopped mint, paprika, chilli, brown sugar, salt, starch, yeast, tomato powder.
